Sweet and Spiced Oven-Roasted Molasses Pork Tenderloin
Ingredients
- 1 pork tenderloin (about 1.5 pounds)
- 1/4 cup molasses
- 3 tablespoons brown sugar
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon clove powder
- 1/4 teaspoon nutmeg
- 1/4 teaspoon xanthan gum
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Prepare the Marinade:
In a mixing bowl, combine the molasses, brown sugar, garlic powder, ground ginger, clove powder, nutmeg, and xanthan gum. Mix until the ingredients are thoroughly incorporated, forming a thick paste.
2. Season the Pork:
Pat the pork tenderloin dry with paper towels. Season all sides with salt and black pepper.
3. Apply the Marinade:
Rub the molasses mixture evenly over the pork tenderloin, ensuring it's completely coated. For best results, let the pork marinate in the refrigerator for at least 1 hour to allow the flavors to merge.
4. Preheat the Oven:
Set your oven to preheat at 375°F (190°C).
5. Roast the Pork:
Place the marinated pork tenderloin on a roasting rack in a baking dish. Insert it into the preheated oven and roast for about 25-30 minutes until the internal temperature reaches 145°F (63°C). This will yield a juicy, tenderloin with a hint of pink in the center.
6. Rest and Serve:
Remove the pork from the oven and let it rest for about 10 minutes to allow the juices to redistribute. Slice the tenderloin into medallions before serving.
