Sweet and Spicy Honey Garlic Chicken Stir Fry
Ingredients
For the Chicken:
- 1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
For the Sauce:
- ⅓ cup honey
- ¼ cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon minced garlic
- 1 teaspoon cornstarch
- ½ teaspoon crushed red pepper flakes
For the Vegetables:
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
For Garnish:
- 2 tablespoons sesame seeds
- 2 scallions, chopped
Instructions
1. Prepare the Sauce:
- In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, cornstarch, and crushed red pepper flakes until cornstarch is fully dissolved.
2. Cook the Chicken:
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the cubed chicken pieces in a single layer.
- Cook for about 5-7 minutes until the chicken is golden and cooked through, stirring occasionally. Remove chicken from the skillet and set aside.
3. Stir Fry the Vegetables:
- In the same skillet, add the bell pepper, broccoli, snap peas, and carrot.
- Stir fry the vegetables for 4-5 minutes until they are tender-crisp.
4. Combine and Finish:
- Reduce the heat to medium. Return the chicken to the skillet with the vegetables.
- Pour the prepared sauce over the stir fry mixture.
- Stir continuously for about 2-3 minutes until the sauce is thickened and everything is well-coated.
5. Garnish and Serve:
- Transfer the stir fry to a serving dish.
- Garnish with sesame seeds and chopped scallions before serving.
