Sweet and Spicy Oven-Roasted Salmon with Tropical Salsa
Ingredients
For the Salmon:
- 4 salmon fillets (about 6 ounces each)
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1/4 teaspoon ground cinnamon
- 1 teaspoon salt
- Coconut oil spray
For the Tropical Salsa:
- 1 ripe mango, peeled and diced
- 1 avocado, diced
- 1/2 cup strawberries, hulled and diced
- 1 lime, juiced
- 1 jalapeño pepper, seeded and finely chopped
- 1/4 cup fresh cilantro, chopped
Instructions
1. Preheat and Prepare the Oven:
- Preheat your oven to 400°F (204°C).
2. Prepare the Salmon Spice Mix:
- In a small mixing bowl, combine the brown sugar, smoked paprika, chili powder, garlic powder, onion powder, cayenne pepper, thyme, cinnamon, and salt. Mix well to ensure even distribution of spices.
3. Season the Salmon:
- Pat the salmon fillets dry with a paper towel. Lightly spray a baking sheet with coconut oil to prevent sticking.
- Rub the spice mixture on both sides of each fillet, ensuring each piece is well coated. Arrange the salmon skin-side down on the prepared baking sheet.
4. Roast the Salmon:
- Place the baking sheet in the oven and roast the salmon for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
5. Prepare Tropical Salsa:
- While the salmon is roasting, in a medium bowl, combine the diced mango, avocado, strawberries, lime juice, jalapeño, and cilantro. Stir gently to mix the ingredients thoroughly. Allow the salsa to sit for a few minutes to let the flavors meld.
6. Serve:
- Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
- Plate the salmon and top each piece with a generous scoop of the tropical salsa. Serve immediately for the best flavor.
