Sweet-Tart Raspberry Banana Oat Bars with Greek Yogurt



Ingredients



- 1 cup oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup honey
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 1 tablespoon lemon juice
- 2 ripe bananas, mashed
- 2 large eggs
- 1/2 cup Greek yogurt

Instructions



1. Preheat the Oven
Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper, leaving an overhang on the sides for easy removal.

2. Mix the Dry Ingredients
In a large bowl, combine the oats, all-purpose flour, baking powder, and salt. Stir until well combined.

3. Prepare the Wet Mixture
In a separate bowl, whisk together the honey, melted butter, and vanilla extract. Add in the mashed bananas and eggs, continuing to whisk until the mixture is smooth and homogeneous.

4. Combine Dry and Wet Ingredients
Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined. Be cautious not to overmix.

5. Incorporate Greek Yogurt
Gently fold in the Greek yogurt until just incorporated. This will add a luscious texture to the bars.

6. Layer with Raspberries
Pour half of the batter into the prepared baking dish. Evenly sprinkle the fresh raspberries over the batter, followed by a drizzle of lemon juice. Top with the remaining batter, spreading it gently with a spatula to cover the raspberries.

7. Bake the Bars
Place the dish in the preheated oven and bake for about 25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

8. Cool and Serve
Allow the bars to cool in the dish for 10 minutes, then use the parchment paper to lift them out onto a cooling rack. Once completely cooled, cut into bars and serve.
