Tangy Avocado Bruschetta Snack Delight
Ingredients
- 2 ripe avocados
- 1 French baguette
- 2 medium tomatoes, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro leaves, chopped
- 1 clove garlic, halved
Instructions
1. Prepare the Baguette:
- Slice the baguette into 1/2-inch thick slices.
- Preheat your oven to 375°F (190°C).
- Place the slices on a baking sheet and lightly brush them with olive oil.
- Toast in the oven for 5-7 minutes until they are golden brown and crispy. Remove and set aside.
2. Prepare the Avocado Mix:
- Cut the avocados in half and remove the pits. Scoop the flesh into a bowl.
- Add the lime juice to the avocados and mash them slightly, keeping it chunky.
- Gently fold in the diced tomatoes, chopped red onion, salt, pepper, and cilantro. Mix until just combined.
3. Assemble the Bruschetta:
- Rub the cut side of the garlic clove on the toasted side of each baguette slice for a subtle garlic flavor.
- Spoon a generous amount of the avocado mixture onto each slice.
- Drizzle a touch of olive oil over the top for added flavor.
4. Serve:
- Arrange the assembled bruschetta on a platter and serve immediately as a refreshing snack.
