Tangy Chicken and White Bean Cabbage Soup with Herbed Cream



Ingredients



- 1 small head of cabbage, thinly sliced
- 2 medium potatoes, peeled and diced
- 1 large onion, chopped
- 4 cups chicken stock
- 1 pound boneless chicken breast, diced
- 1 can (15 oz) white beans, drained and rinsed
- 1 large egg, beaten
- 4 slices crusty bread
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- 1 tablespoon fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- 1/2 cup sour cream
- 1 teaspoon paprika
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 2 tablespoons soy sauce
- 2 scallions, thinly sliced
- Salt and pepper to taste

Instructions



1. Prepare Ingredients
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onion, ginger paste, and garlic paste. Sauté until onions are translucent, about 5 minutes.

2. Cook the Chicken
Add diced chicken to the pot and cook until browned on all sides, approximately 7 minutes. Season with paprika, salt, and pepper.

3. Assemble Soup Base
Add cabbage, potatoes, and chicken stock to the pot. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 20 minutes, or until potatoes are tender.

4. Add Beans and Seasonings
Stir in the drained white beans, lemon juice, and soy sauce. Simmer for another 5 minutes to meld flavors.

5. Create Herbed Cream
In a small bowl, combine sour cream, dill, parsley, chives, and a pinch of salt. Mix well and set aside.

6. Fry the Egg
In a separate frying pan, heat 1 tablespoon of olive oil. Add the beaten egg, swirling the pan a bit to create a thin omelet-like layer. Cook until set, about 2 minutes. Roll up the egg and slice into thin strips.

7. Prepare the Bread
Toast the slices of crusty bread until golden, either in a toaster or on a skillet.

8. Final Touches
Ladle the soup into bowls. Top with egg strips and scallions. Drizzle with the herbed cream. Serve alongside slices of crusty bread.
