Tantalizing Thai-Inspired Chicken Coconut Curry
Ingredients
- 1 lb ground chicken
- 1 can (13.5 oz) coconut milk
- 1 tbsp ginger, freshly grated
- 2 tbsp lemongrass paste
- 3 cloves garlic, minced
- 3 green onions, sliced (white and green parts separated)
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 2 tbsp brown sugar
- 1 tsp Chinese 5 spice
- 2 tbsp fish sauce
- 1 tbsp sesame oil
- 1 tbsp avocado oil
- 1 cup chicken broth
- 2 tbsp rice vinegar
- 1 lime, juiced
- 1/2 tsp sea salt, plus more to taste
- 1/4 cup fresh cilantro leaves, chopped
Instructions
1. Prepare the Aromatics:
- Heat the avocado oil in a large skillet over medium heat.
- Add the white parts of the green onions, garlic, and ginger. Sauté until fragrant, about 2-3 minutes.
2. Cook the Ground Chicken:
- Increase the heat to medium-high and add the ground chicken. Cook, breaking it up with a wooden spoon, until fully cooked and no longer pink, approximately 6-7 minutes.
3. Add the Flavors:
- Reduce the heat to medium. Stir in the lemongrass paste, Chinese 5 spice, and brown sugar. Cook for another 2 minutes to blend the flavors.
4. Simmer the Curry:
- Pour in the coconut milk, chicken broth, fish sauce, and rice vinegar. Bring to a gentle boil, then reduce to a simmer. Cook for 15 minutes, allowing the flavors to meld.
5. Finish and Serve:
- Add sesame oil, lime juice, basil, mint, and the green parts of the green onions. Stir well and adjust the seasoning with sea salt to taste.
- Serve hot, garnished with cilantro.
