Tantalizing Tikka Masala Chicken Bowl with Broccoli and Jasmine Rice
Ingredients
- 2 cups jasmine rice
- 1 lb chicken breast, cubed
- 2 tablespoons tandoori masala
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 slices bacon, chopped
- 1 cup tikka masala sauce
- 1 head broccoli, cut into florets
- 4 large eggs
- 1 cup shredded cheese (cheddar or your preference)
- 2 pieces tandoori naan
Instructions
1. Prepare the Jasmine Rice:
- Rinse 2 cups of jasmine rice under cold water until the water runs clear. Place rice in a microwave-safe bowl with 3 cups of water. Cover the bowl loosely with a microwave-safe lid or plastic wrap.
- Microwave on high for PT15M (15 minutes) or until the rice is tender and water is absorbed. Let it rest for 5 minutes before fluffing with a fork.
2. Cook the Chicken:
- In a microwave-safe dish, combine the cubed chicken breast, tandoori masala, garlic powder, salt, and black pepper. Mix well to coat the chicken evenly.
- Cover the dish with a microwave-safe lid and cook on high for PT8M (8 minutes), stirring halfway through, until the chicken is cooked through.
3. Bacon and Broccoli:
- Place chopped bacon in a separate microwave-safe dish and cover with a paper towel. Microwave on high for PT4M (4 minutes) until crispy. Set aside.
- Use the bacon grease remaining in the dish to coat the broccoli florets. Cover the dish and microwave for PT4M (4 minutes) until the broccoli is tender-crisp.
4. Prepare Scrambled Eggs:
- In a bowl, whisk the eggs until smooth. Pour into a microwave-safe dish and cover. Microwave on high for PT2M (2 minutes), stopping every 30 seconds to stir, until the eggs are cooked through and scrambled.
5. Assemble the Bowl:
- Divide the cooked jasmine rice into four bowls. Top each with the cooked chicken, broccoli, bacon, scrambled eggs, and sprinkle shredded cheese over the top.
6. Heat and Serve:
- Drizzle each bowl with 1/4 cup tikka masala sauce. Microwave each assembled bowl for PT2M (2 minutes) until the cheese is melted, and everything is warm.
- Warm the tandoori naan in the microwave for 30 seconds and serve alongside each bowl.
