Teriyaki Chicken Pineapple Lettuce Wraps
Ingredients
- 2 boneless, skinless chicken breasts, diced
- 1 cup fresh pineapple, diced
- 1 cup lettuce leaves, large and whole for wrapping
- 2 medium tomatoes, diced
- 4 green onions, chopped
- 1 cup cheddar cheese, shredded
- 1/2 cup teriyaki sauce
- 4 large tortillas
- 1 tablespoon vegetable oil
Instructions
1. Preparation:
- Prepare all your ingredients: Dice the chicken breasts, pineapple, and tomatoes.
- Chop the green onions and shred the cheddar cheese.
- Separate and wash lettuce leaves. Set aside to dry.
2. Cook the Chicken:
- Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat.
- Add the diced chicken breasts to the skillet. Stir-fry for approximately 5 minutes, or until the chicken is cooked through and no longer pink inside.
3. Add Pineapple and Sauce:
- Reduce heat to medium and add the diced pineapple to the skillet.
- Pour in 1/2 cup teriyaki sauce. Stir to combine with the chicken.
- Cook, stirring occasionally, for about 3 minutes, allowing the sauce to thicken slightly and the pineapple to warm through.
4. Assemble Wraps:
- Place a warm tortilla on a clean surface.
- Arrange a few lettuce leaves over the tortilla.
- Spoon an even portion of the teriyaki chicken and pineapple mixture onto the lettuce.
- Top with diced tomatoes, green onions, and a sprinkle of shredded cheese.
5. Serve:
- Fold the sides of the tortilla over the filling and roll tightly to create a wrap.
- Cut each wrap in half for easy handling and serving.
