Thai Green Curry with White Fish and Snow Peas
Ingredients
- 2 tablespoons avocado oil
- 2 shallots, finely sliced
- 2 tablespoons green curry paste
- 1 can (13.5 oz) coconut milk
- 1 tablespoon fish sauce
- 6 kaffir lime leaves
- 1 pound white fish fillets, cut into 2-inch pieces
- 1 cup snow peas, trimmed
- 1 lime, juiced
- 1/4 cup mixed green herbs (e.g., cilantro, basil, mint), chopped
- 2 red chilies, sliced (optional for garnish)
Instructions
1. Prepare the Aromatics
Heat a large skillet over medium heat. Add the avocado oil and let it warm for about 1 minute. Add the sliced shallots and sauté for 3-4 minutes until they are soft and translucent.
2. Cook the Curry Paste
Stir in the green curry paste and cook for 2 minutes, stirring frequently to release the aromas.
3. Mix with Coconut Milk
Pour in the coconut milk and mix well with the curry paste. Bring the mixture to a gentle simmer.
4. Flavor the Curry
Add the fish sauce and kaffir lime leaves to the skillet. Simmer gently for 5 minutes to allow the flavors to blend.
5. Cook the Fish
Gently place the white fish pieces into the curry sauce. Cook for 5-6 minutes, or until the fish is opaque and cooked through.
6. Add Vegetables
Stir in the snow peas and simmer for an additional 2-3 minutes until they are tender-crisp.
7. Finish with Lime and Herbs
Remove the skillet from heat. Squeeze the lime juice over the curry and mix in the chopped green herbs. Taste and adjust seasoning if needed.
8. Garnish and Serve
Transfer the curry to serving bowls and garnish with sliced red chilies if desired. Serve hot.
