Thai-Inspired Peanut Ramen with Lime and Green Onion



Ingredients


- 2 tablespoons neutral oil
- 1 pound ground chicken
- 2 packs instant ramen noodles (discard seasoning packets)
- 1/2 cup creamy peanut butter
- 1 lime (juiced and zested)
- 4 green onions (chopped, whites and greens separated)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups water

Instructions



1. Prepare the Ingredients:
- Chop the green onions, keeping the white and green parts separate.
- Juice and zest the lime; set both aside.

2. Cook the Ramen Noodles:
- In a medium pot, bring 3 cups of water to a boil.
- Add the instant ramen noodles and cook for 2 minutes until slightly tender.
- Drain and set aside, discarding the seasoning packets.

3. Cook the Chicken:
- In a large skillet over medium heat, add 2 tablespoons of neutral oil.
- Add the ground chicken, breaking it into small pieces with a wooden spoon.
- Season with salt and black pepper.
- Cook for approximately 6-8 minutes, or until the chicken is cooked through and no longer pink.

4. Prepare the Peanut Sauce:
- Lower the heat to medium-low.
- Stir in the creamy peanut butter until evenly distributed around the chicken.
- Add the lime juice and zest for an added depth of flavor.

5. Combine Ramen and Sauce:
- Add the cooked ramen to the skillet with the chicken and peanut sauce.
- Toss to coat well, ensuring all noodles are covered in the sauce.
- Sprinkle in the white parts of the green onions and mix thoroughly.

6. Garnish and Serve:
- Remove from heat, transfer to serving plates, and sprinkle the green parts of the green onions on top for a fresh crunch.
- Serve immediately with a lime wedge on the side for extra zing.
