Thanksgiving Feast Casserole
Ingredients
- Shells & Cheese: 1 box (7.25 oz)
- Chicken Broth: 2 cups
- Turkey Stuffing: 1 cup
- Evaporated Milk: 1 can (12 oz)
- Canned Pumpkin: 1 cup
- Condensed Cream of Mushroom Soup: 1 can (10.5 oz)
- Cut Green Beans: 1 can (14.5 oz), drained
- French Fried Onions: 1 cup
- Poultry Spice: 1 tablespoon
- Brown Gravy Mix: 1 packet
- Herb & Cornbread Stuffing: 1 cup
- Mini Marshmallows: 1 cup
- Sweet Potatoes: 2 large, peeled and diced
- Yellow Onions: 2 medium, chopped
- Russet Potatoes: 2 large, peeled and diced
- Baby Carrots: 2 cups
- Cranberries: 1/2 cup, dried
- Whipped Topping: 1 cup
- Pie Crust: 1 pre-made crust (9 inches)
- Hawaiian Sweet Rolls: 6 rolls
- Jennie-O Turkey: 1 lb, ground
- Salt: 1 teaspoon
- Cooking Oil: 2 tablespoons
- Brown Sugar: 2 tablespoons
- Eggs: 2 large
- Milk: 1 cup
- Butter: 1/2 cup (1 stick), divided
Instructions
1. Preheat Oven and Prepare Baking Dish
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking oil.
2. Prepare Shells & Cheese
Cook shells & cheese according to the package instructions and set aside.
3. Cook Turkey and Vegetables
In a skillet, heat 2 tablespoons of cooking oil over medium heat. Add chopped yellow onions and ground Jennie-O turkey. Cook until browned and fully cooked. Stir in poultry spice and set aside.
4. Mash the Potatoes and Carrots
In a large pot, bring water to a boil. Add diced russet potatoes, sweet potatoes, and baby carrots. Cook until soft, about 15 minutes. Drain and return to the pot. Add 1/4 cup butter, evaporated milk, salt, and brown sugar. Mash until smooth. Set aside.
5. Mix the Casserole Base
In a large bowl, combine canned pumpkin, condensed cream of mushroom soup, cooked turkey mixture, green beans, turkey stuffing, herb & cornbread stuffing, cranberries, and prepared shells & cheese. Stir in brown gravy mix blended with chicken broth. Pour mixture into the greased baking dish.
6. Layer Toppings and Bake
Top the casserole with mashed potato mixture. Sprinkle French fried onions and mini marshmallows over the top. Drizzle melted remaining 1/4 cup butter on top. Bake in the preheated oven for 30 minutes or until the top is golden brown and marshmallows are slightly toasted.
7. Prepare Pie and Rolls
In a separate baking dish, place pie crust and fill with whipped topping, layering with Hawaiian sweet rolls. Place in the oven for the last 10 minutes of the casserole baking time.
8. Serve
Let the casserole cool for 5 minutes before serving. Slice the pie and serve rolls alongside for a complete meal.
