Tomato and Ginger Infused Spaghetti with Crispy Pancetta and Creamy Pea Sauce



Ingredients



- 8 oz spaghetti
- 4 oz mini shell pasta
- 6 oz pancetta, diced
- 6 oz smoked bacon, diced
- 1 cup green peas, fresh or frozen
- 1 1/2 cups heavy cream
- 4 medium-sized tomatoes, finely chopped
- 2 chicken breasts, thinly sliced
- 2 medium parsnips, peeled and diced
- 1 tablespoon fresh ginger, minced
- 4 oz prosciutto, thinly sliced
- 1 cup Parmesan cheese, freshly grated
- Salt and black pepper to taste
- 2 tablespoons olive oil

Instructions



1. Prepare Ingredients:
Dice the pancetta and smoked bacon. Ensure the chicken breasts are thinly sliced for quick cooking. If not already done, peel and dice the parsnips, mince the ginger, and finely chop the tomatoes.

2. Cook Pasta:
Boil water in a large pot with a pinch of salt. Add both the spaghetti and mini shell pasta. Cook to al dente following package instructions, typically about 10 minutes. Reserve one cup of pasta water before draining.

3. Cook Pancetta and Bacon:
Heat a large skillet over medium heat and add the olive oil. Add the diced pancetta and smoked bacon. Cook until crispy, about 6-8 minutes. Remove from skillet and set aside.

4. Cook Chicken & Parsnips:
In the same skillet, add the sliced chicken breasts and diced parsnips. Sauté until the chicken is cooked through and parsnips soften, about 8-10 minutes. Season with salt and pepper.

5. Prepare Tomato and Pea Sauce:
To the skillet with chicken and parsnips, add minced ginger and chopped tomatoes. Cook until the tomatoes start to break down, about 5 minutes. Add peas and heavy cream; stir well to combine. Simmer the sauce for about 5 minutes, adding reserved pasta water to adjust the consistency if necessary.

6. Combine and Serve:
Toss the cooked spaghetti and shell pasta into the skillet, ensuring to coat it with the sauce evenly. Mix in half of the crispy pancetta and bacon. Cook for 2 more minutes on low heat. Serve the pasta garnished with the remaining pancetta, bacon, sliced prosciutto, and freshly grated Parmesan cheese.
