Tomato Basil Bruschetta with Mozzarella
Ingredients
- 1 loaf of baguette, sliced
- 2 cups cherry tomatoes, quartered
- 1 cup fresh mozzarella, cubed
- 3 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
1. Prepare the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Baguette:
- Arrange the baguette slices on a baking sheet.
- Drizzle each slice lightly with olive oil.
3. Toast the Bread:
- Place the baking sheet in the preheated oven.

4. Create the Topping Mixture:
- In a medium bowl, combine the quartered cherry tomatoes, cubed mozzarella, minced garlic, chopped basil, and parsley.
- Drizzle the mixture with 1/4 cup olive oil and 2 tablespoons balsamic vinegar.
- Season with salt and pepper to taste.

5. Assemble the Bruschetta:
- Remove the toasted baguette slices from the oven and let them cool slightly.
- Spoon a generous amount of the tomato mozzarella mixture onto each toast.
6. Finish and Serve:
