Tropical Coconut Dream Cake



Ingredients



- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 5 large egg whites
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1 cup sweetened shredded coconut
- 1/2 teaspoon cream of tartar
- 1/4 cup hot water
- 1 cup sweetened coconut flakes, for topping

Instructions



1. Preheat Oven: Preheat your oven to 350°F (175°C).

2. Prepare Pans: Grease and flour two 8-inch round cake pans, tapping out excess flour. Line with parchment paper for easier release.

3. Mix Dry Ingredients: In a medium bowl, whisk together 1 3/4 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Set aside.

4. Cream Butter and Sugar: In a large mixing bowl, cream together 1/2 cup of softened butter and 1 1/2 cups of granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy, approximately 3 minutes.

5. Add Egg Whites: Gradually add 5 egg whites, one at a time, beating well after each addition until the mixture is smooth and creamy.

6. Combine Wet Ingredients: In a separate small bowl or measuring cup, whisk together 1 cup of whole milk with 1 teaspoon each of vanilla and coconut extracts.

7. Alternate Mixing: With the mixer on low speed, alternately add the dry ingredients and the milk mixture to the creamed butter and sugar, starting and ending with the flour. Mix until just combined.

8. Incorporate Coconut: Fold in 1 cup of sweetened shredded coconut gently into the batter using a spatula.

9. Prepare Meringue: In a clean bowl, whisk 1/2 teaspoon of cream of tartar with the remaining egg whites until soft peaks form. Gradually add 1/4 cup of hot water, whisking until stiff peaks are formed.

10. Combine Meringue and Batter: Gently fold the meringue into the cake batter until fully incorporated, being careful not to deflate the mixture.

11. Divide Batter and Bake: Evenly divide the batter between the prepared cake pans. Smooth the tops and bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

12. Toast Coconut Flakes: While the cake is baking, spread 1 cup of sweetened coconut flakes on a baking sheet and toast in the oven for about 5-7 minutes, stirring occasionally, until golden brown. Watch carefully to prevent burning.

13. Cool and Assemble: Allow cakes to cool in their pans for 10 minutes before transferring to a wire rack to cool completely. Once cooled, assemble the layers, sprinkle with toasted coconut flakes, and serve.
