Ingredients
- 1 pre-made graham cracker crust (9-inch)
- 1 can (20 oz) crushed pineapple, drained
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup maraschino cherries, halved
- 1/4 cup maraschino cherry juice
- 1 cup shredded coconut
- 1/2 cup chopped pecans
- 2 tablespoons lemon juice
- Whipped cream, for topping
Instructions
1. Prepare the Filling.
- In a large mixing bowl, combine the drained crushed pineapple, sweetened condensed milk, and lemon juice. Mix until well blended.
2. Add the Cherries and Coconut.
- Gently fold in the halved maraschino cherries and shredded coconut. Ensure the ingredients are evenly distributed throughout the mixture.
3. Incorporate the Nuts and Cherry Juice.
- Stir in the chopped pecans and maraschino cherry juice. This will add flavor depth and a slight pink hue to the mixture.
4. Assemble the Dessert.
- Pour the pineapple-cherry mixture into the graham cracker crust, spreading it evenly with a spatula.
5. Refrigerate.
- Cover the pie with plastic wrap or a pie cover. Place it in the refrigerator for at least PT2H (2 hours) to allow the flavors to meld and the filling to set.
6. Garnish and Serve.
- Before serving, top with whipped cream. Optionally, decorate with additional cherries or pecans for extra flair.
