Turkish-Style Poached Eggs with Spiced Yogurt Sauce
Ingredients
For the Sauce:
- 1 cup plain yogurt
- 2 cloves garlic, minced
- 1 tablespoon finely chopped fresh parsley
- ¼ teaspoon salt
For the Poached Eggs:
- 4 large eggs
- 2 tablespoons vinegar
- 4 cups water
For the Spiced Butter:
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon Aleppo pepper
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
For Garnish & Serving:
- 1 tablespoon fresh dill, chopped
- 4 slices crusty bread, toasted
Instructions
Step 1: Prepare the Yogurt Sauce
1. In a bowl, combine 1 cup of plain yogurt, 2 minced garlic cloves, 1 tablespoon of finely chopped parsley, and ¼ teaspoon salt.
2. Stir until smooth and well combined. Set aside to let the flavors meld.
Step 2: Poach the Eggs
1. Fill a medium saucepan with 4 cups of water and add 2 tablespoons of vinegar.
2. Bring the water to a gentle simmer over medium heat.
3. Crack each egg into a small bowl, then gently slip the egg into the simmering water, one at a time.
4. Poach the eggs for 3-4 minutes until the whites are set, and the yolks remain soft.
5. Remove the eggs with a slotted spoon and drain on a paper towel.
Step 3: Prepare the Spiced Butter
1. In a small skillet over low heat, melt 2 tablespoons of unsalted butter with 2 tablespoons of olive oil.
2. Once melted, add 1 teaspoon of Aleppo pepper, ½ teaspoon of paprika, and ¼ teaspoon of cayenne pepper.
3. Stir and heat for about 2 minutes, allowing the spices to infuse the butter.
Step 4: Assemble the Dish
1. Spread a generous amount of the garlic-yogurt sauce onto a serving platter.
2. Place the poached eggs on top of the yogurt.
3. Drizzle the spiced butter over the eggs and yogurt.
4. Garnish with 1 tablespoon of chopped fresh dill.
Step 5: Serve
1. Serve immediately with slices of toasted crusty bread to mop up the delicious yogurt and spiced butter.
