Twice-Baked Potato Casserole Delight
Ingredients
- 4 large Russet potatoes
- 3 medium Red potatoes
- 1 cup mayonnaise
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 cup bacon crumbles
- 1/2 cup sliced green onions (plus extra for garnish)
- Salt and pepper to taste
Instructions
1. Prepare the Potatoes:
- Prick each Russet and Red potato several times with a fork to allow steam to escape.
- Arrange the potatoes in a microwave-safe dish in a single layer.
2. Microwave Cooking:
- Microwave the potatoes on high for approximately 12 minutes for Russet potatoes and 10 minutes for Red potatoes, or until they are tender when pierced with a fork.
- Flip the potatoes halfway through cooking to ensure even cooking. (PT12M and PT10M respectively)
3. Potato Prep Post-Microwaving:
- Allow the potatoes to cool slightly until they can be handled. Peel the skin off the potatoes using your hands or a small knife.
- In a large mixing bowl, mash the peeled potatoes until smooth with a masher or fork.
4. Mix the Filling:
- To the mashed potatoes, add the mayonnaise, sour cream, half of the shredded cheddar cheese, and half of the bacon crumbles.
- Season with salt and pepper. Mix until everything is well combined and creamy.
5. Assemble the Casserole:
- Transfer the potato mixture into a microwave-safe casserole dish. Spread it evenly with a spatula.
- Sprinkle the remaining shredded cheddar cheese and bacon crumbles over the top.
6. Final Microwave Cooking:
- Microwave the assembled dish on high for 5-6 minutes, or until the cheese has melted and the center is heated through. (PT6M)
7. Garnish and Serve:
- Sprinkle sliced green onions on top for added color and flavor. Serve hot.
