Ultimate Avocado Snack Bowl with Mango, Bacon, and Crunchy Pumpkin Seeds



Ingredients



- 3 ripe avocados, peeled and pitted
- 1/2 teaspoon salt
- 1 small onion, finely diced
- 4 strips of bacon
- 1 tablespoon fresh lime juice
- 1 jalapeño, finely chopped (remove seeds for less heat)
- 1/4 cup fresh cilantro, chopped
- 2 medium tomatoes, deseeded and diced
- 2 tablespoons pickled jalapeños, chopped
- 1/4 cup pickled red onion, chopped
- 1 ripe mango, peeled and diced
- 1/4 cup pumpkin seeds, toasted

Instructions



1. Prepare the Bacon:
- On the stove, heat a non-stick skillet over medium heat. Add the bacon strips and cook until crisp, about PT10M _(10 minutes)_.
- Transfer to a paper towel-lined plate to drain excess oil. Once cooled, crumble or chop the bacon and set aside.

2. Mash Avocados:
- In a large bowl, place the peeled and pitted avocados. Add the 1/2 teaspoon of salt. Mash using a fork or potato masher until you achieve a creamy yet slightly chunky texture.

3. Mix Ingredients:
- To the mashed avocados, add the finely diced onion, fresh lime juice, chopped jalapeño, half of the chopped cilantro (reserve the other half for garnish), diced tomatoes, and half of the chopped bacon. Stir until all ingredients are well combined.

4. Layer and Assemble:
- Gently fold in the diced mango, pickled jalapeños, and pickled red onion, being careful not to overly mash the chunks.
- Taste and adjust seasoning with more salt or lime juice if necessary.

5. Toast Pumpkin Seeds:
- In a dry skillet, toast the pumpkin seeds over low heat for about PT3M _(3 minutes)_, until slightly golden and aromatic. Stir frequently to prevent burning.

6. Final Touches:
- Transfer the avocado mixture to a serving bowl. Top with remaining crumbled bacon and toasted pumpkin seeds.
- Garnish with the reserved cilantro and serve immediately.
