Ultimate BBQ Charcoal-Grilled Ribs Extravaganza
Ingredients
- 2 racks of baby back ribs
- 2 racks of spareribs
- 1 cup barbecue sauce
- 1 cup dry rub (store-bought or homemade)
Instructions
1. Prepare the Ribs:
- Remove the membrane from the back of each rack of ribs. Place the ribs on a clean surface.
2. Apply the Dry Rub:
- Generously coat each rack of ribs with the dry rub. Massage the spices into the meat to ensure an even coating. Let the ribs sit at room temperature for 30 minutes to allow the flavors to meld.
3. Preheat the Grill:
- Prepare the charcoal grill by arranging the coals on one half of the grill to create a two-zone fire (direct and indirect heat). Heat until the coals are ash-gray, around 350°F.
4. Grill the Ribs:
- Place the ribs on the cooler side of the grill (indirect heat) with the meatier side facing up. Close the lid and grill for about 2 hours, maintaining a temperature of approximately 300°F. Rotate the ribs every 30 minutes for even cooking.
5. Baste with Barbecue Sauce:
- After 2 hours, begin basting the ribs with barbecue sauce every 15 minutes. Move them to the hotter side of the grill (direct heat) for a slight caramelization. Watch closely to prevent burning.
6. Finish and Rest:
- Cook until the internal temperature reaches 190°F, ensuring a tender result. Once done, remove the ribs from the grill and let them rest for 10 minutes before serving.
