Ultimate Berry-Laden Cake with Cream Cheese Mascarpone Frosting
Ingredients

- 1 box white cake mix
- 4 egg whites

Instructions
1. Prepare the Cake Batter:
Preheat the oven to 350°F (175°C). Lightly coat two 9-inch round cake pans with nonstick cooking spray and set aside. In a large mixing bowl, combine the white cake mix, egg whites, milk, neutral oil, vanilla extract, and almond extract. Use an electric mixer on medium speed to blend until the mixture is smooth, about 2 minutes.
2. Bake the Cake Layers:
Evenly divide the batter between the prepared cake pans. Place the pans on the middle oven rack and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Once baked, let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
3. Prepare the Berry Mix:
In a medium bowl, combine fresh strawberries, blueberries, blackberries, raspberries, and granulated sugar. Gently toss to coat the berries evenly. Set aside to macerate for 15 minutes.
4. Make the Frosting:
In a large bowl, combine the softened cream cheese and mascarpone cheese. Add the powdered sugar and kosher salt. Beat the mixture on medium speed until smooth and creamy. Gradually add the heavy cream while mixing, and continue to beat until the frosting is light and fluffy.
5. Assemble the Cake:
Place one layer of the cooled cake on a serving platter. Spread a generous amount of frosting over the top, followed by an even layer of the berry mixture. Top with the second cake layer and repeat the frosting and berry coating on the top layer. If desired, use the remaining frosting to cover the sides of the cake.
6. Chill Before Serving:
Refrigerate the assembled cake for at least 1 hour before serving to allow the frosting to set and the flavors to meld.
