Ultimate Breakfast Quesadilla with Fresh Avocado and Tomatillo Salsa
Ingredients
- 4 large flour tortillas
- 2 tablespoons butter
- 6 large eggs
- 1/2 teaspoon salt
- 1 cup shredded cheese
- 1/2 cup diced green chiles
- 1/4 cup fresh cilantro, chopped
- Spray oil
- 2 tablespoons olive oil
- 1 cup pico de gallo
- 1 avocado, sliced
- 1 cup guacamole
- 1/2 cup sour cream
- 1 cup roasted tomatillo salsa
Instructions
1. Prepare the Egg Mixture:
- In a medium bowl, crack 6 large eggs and add 1/2 teaspoon of salt.
- Whisk until well combined and fluffy.
2. Cook the Eggs:
- Heat a non-stick skillet over medium heat.
- Add 1 tablespoon of butter.
- Pour in the whisked eggs and cook, stirring gently, until just set but still slightly runny.
- Remove from heat and set aside.
3. Assemble the Quesadillas:
- Lay out 4 flour tortillas on a clean surface.
- Evenly sprinkle shredded cheese over half of each tortilla.
- Add cooked eggs, diced green chiles, and chopped cilantro over the cheese.
- Fold each tortilla in half to create a semicircle.
4. Pan Fry the Quesadillas:
- Heat spray oil in a large skillet over medium heat.
- Add 1/2 tablespoon of olive oil.
- Place one or two assembled quesadillas in the skillet, depending on size.
- Cook for approximately 3 minutes on each side, or until golden brown and the cheese is melted.
- Repeat with remaining quesadillas, adding more spray oil and olive oil as needed.
5. Serve with Toppings:
- Slice each quesadilla into wedges.
- Serve with pico de gallo, sliced avocado, guacamole, sour cream, and roasted tomatillo salsa on the side.
