Ultimate Breakfast Skillet Fiesta



Ingredients


- 4 large potatoes, peeled and diced
- 1/4 cup all-purpose flour
- 1 teaspoon cumin
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon chili powder
- 2 green chilies, diced
- 2 tablespoons hot sauce
- 2 tablespoons cooking oil
- 2 sausages, sliced
- 4 strips of bacon, chopped
- 4 ounces ham, diced
- 8 ounces ground beef
- 4 large eggs
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 avocado, sliced
- 8 ounces taco meat
- 1 cup shredded cheese
- 2 tablespoons chives, chopped
- 2 tomatoes, diced
- 1/2 cup ranch dressing
- 1/2 cup sour cream

Instructions



1. Prepare Ingredients:
- In a medium bowl, combine diced potatoes with flour, cumin, black pepper, salt, and chili powder. Toss to coat evenly.

2. Fry Potatoes:
- Heat 1 tablespoon of cooking oil in a large skillet over medium heat.
- Add the seasoned potatoes, cooking for about PT15M (15 minutes) until golden brown and crispy. Stir occasionally.
- Remove potatoes from the skillet and set aside.

3. Cook Meats:
- In the same skillet, add 1 tablespoon of cooking oil and sauté the onion and green pepper for PT5M (5 minutes) until soft.

4. Prepare Meats:
- Add sliced sausages, chopped bacon, diced ham, and ground beef to the skillet. Cook for PT10M (10 minutes) until everything is browned and fully cooked.

5. Incorporate Taco Meat:
- Stir in the taco meat and cook for an additional PT3M (3 minutes).

6. Combine Ingredients:
- Return the crispy potatoes to the skillet with the meats. Add green chilies and mix all ingredients well.

7. Cook Eggs:
- Push the mixture to one side of the skillet. Crack the eggs and scramble them on the empty side of the skillet for PT5M (5 minutes).

8. Garnish and Serve:
- Once the eggs are cooked, mix everything together and sprinkle the shredded cheese on top. Let it melt for PT2M (2 minutes).
- Top the skillet with sliced avocado, diced tomatoes, chopped chives, a drizzle of ranch dressing, and dollops of sour cream.
- Serve with hot sauce on the side.
