Ultimate Charcoal Grilled Seafood Paella
Ingredients
- 1 ½ cups Bomba rice
- A pinch of saffron threads
- 4 oz chorizo, sliced
- 2 tablespoons sofrito
- 1 lb mixed seafood (shrimp, clams, mussels, and squid)
- 4 cups seafood stock
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
- 1 lemon, cut into wedges, for serving
Instructions
1. Prepare the Grill:
Preheat your charcoal grill to medium-high heat, arranging the hot coals evenly. Ensure that the grill grates are clean and oiled to prevent sticking.
2. Saffron Infusion:
In a small bowl, crush a pinch of saffron threads. Add 2 tablespoons of warm water to the bowl to bloom the saffron. Set aside.
3. Cook the Chorizo:
Place a large paella pan directly on the grill. Add olive oil and let it heat for about 1 minute. Add the sliced chorizo and sauté for 3-4 minutes, stirring occasionally, until it starts to brown.
4. Add Sofrito and Rice:
Stir in the sofrito with the chorizo, cooking for an additional 2 minutes until fragrant. Add the Bomba rice to the pan, stirring well to coat each grain with the oil and chorizo drippings. Cook for another 2 minutes.
5. Layer the Seafood:
Arrange the mixed seafood evenly over the rice. Pour in the seafood stock, followed by the saffron infusion. Add smoked paprika, then season with salt and black pepper to taste. Stir gently to combine.
6. Cook the Paella:
Spread the ingredients evenly across the paella pan. Close the grill lid and cook for approximately 20-25 minutes. Avoid stirring the rice as it cooks, allowing a crust to form on the bottom.
7. Rest and Serve:
Once the seafood is cooked and the stock absorbed, remove the pan from the grill. Let the paella rest for 5 minutes before garnishing with fresh parsley and serving with lemon wedges.
