- 2 cups rolled oats
- 1 cup toasted coconut
- 1 1/2 cups chocolate chips
- 1 cup dried fruit (e.g., cranberries or raisins)
- 1 cup mixed nuts, chopped
- 1 tablespoon espresso powder

Instructions



1. Preheat the Oven:
Preheat your oven to 350°F (175°C).

2. Prepare Baking Sheets:
Line two baking sheets with parchment paper or silicone baking mats for easy cookie removal and clean-up.

3. Cream the Butter and Sugars:
In a large mixing bowl, beat 1 cup of softened unsalted butter with 1 cup of granulated sugar and 1 cup of packed brown sugar until the mixture is light and creamy. This should take about 2 to 3 minutes using an electric mixer on medium speed.

4. Add Wet Ingredients:
Add 2 large eggs one at a time, mixing well after each addition. Stir in 2 teaspoons of vanilla extract until fully incorporated.

5. Mix Dry Ingredients:
In a separate bowl, whisk together 1 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.

6. Combine Mixtures:
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined and no dry flour is visible.

7. Fold in Additional Ingredients:
Gently fold in 2 cups of rolled oats, 1 cup of toasted coconut, 1 1/2 cups of chocolate chips, 1 cup of dried fruit, 1 cup of chopped mixed nuts, and 1 tablespoon of espresso powder. Mix until evenly distributed throughout the dough.

8. Shape Cookies:
Using a tablespoon or a cookie scoop, portion out dough onto the prepared baking sheets, leaving about 2 inches between each cookie to allow room for spreading.

9. Bake the Cookies:
Bake in the preheated oven for 12 to 15 minutes, or until the cookies are golden brown and slightly crisp around the edges.

10. Cool:
Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
