Ultimate Chocolate Berry Delight Cake
Ingredients
- For the Cake Layer:
- 1 cup Red velvet powder
- 1/2 cup Cocoa powder
- 3/4 cup Sugar
- 3/4 cup Milk
- 3 large Eggs
- 1 tsp Vanilla extract
- 1/2 cup Vegetable oil
- For the Cream Layers:
- 1 cup Cream cheese
- 1/2 cup Mascarpone cheese
- 1/2 cup Whipping cream
- 1/2 cup Powdered sugar
- 1/2 tsp Vanilla extract
- For the Berry Compote:
- 1 cup Mixed berries (Raspberries, Blueberries, Strawberries)
- 1/4 cup Sugar
- 2 tbsp Lemon juice
- For the Garnish:
- 1/2 cup Oreo cookies, crushed
- 1/4 cup Pistachios, chopped
- 1/4 cup Walnuts, chopped
- 1/4 cup Candied orange peel
- 1/4 cup Desiccated coconut
- 2 tbsp Nutella
- 2 tbsp Peanut butter
- 2 tbsp Caramel cream
- 2 tbsp Honey
- 1/4 cup White chocolate, melted
- Fresh berries for topping
Instructions
1. Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine 1 cup of red velvet powder and 1/2 cup of cocoa powder.
- Add 3/4 cup sugar, 3/4 cup milk, 3 large eggs, 1 tsp vanilla extract, and 1/2 cup vegetable oil. Mix well until smooth.
- Pour the batter into a greased 9-inch round cake pan.
2. Bake the Cake:
- Place the cake in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean (PT25-30M, 25-30 minutes).
- Allow the cake to cool completely before removing from the pan.
3. Create the Cream Layer:
- In a bowl, beat 1 cup of cream cheese and 1/2 cup of mascarpone cheese until smooth.
- Gradually add 1/2 cup whipping cream, 1/2 cup powdered sugar, and 1/2 tsp vanilla extract, beating until fluffy.
4. Prepare the Berry Compote:
- In a saucepan over medium heat, combine 1 cup mixed berries, 1/4 cup sugar, and 2 tbsp lemon juice.
- Cook for 10 minutes, stirring often, until the berries break down and thicken slightly (PT10M, 10 minutes).
- Let it cool to room temperature.
5. Assemble the Cake:
- Spread the cream layer evenly over the cooled cake.
- Spoon the berry compote on top of the cream layer, allowing some to drip over the edges.
- Drizzle 2 tbsp Nutella and 2 tbsp peanut butter over the top.
- Sprinkle 1/2 cup crushed Oreo cookies, 1/4 cup chopped pistachios, 1/4 cup chopped walnuts, candied orange peel, and desiccated coconut over the cake.
6. Garnish and Finish:
- Drizzle 2 tbsp caramel cream, 2 tbsp honey, and 1/4 cup melted white chocolate over the toppings.
- Decorate with additional fresh berries for a colorful finish.
