Ultimate Comfort: Savory Beef and Vegetable Shepherd's Pie
Ingredients
- 1 pound ground beef
- 1 large onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 2 tablespoons flour
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup frozen peas

- 4 large potatoes, peeled and quartered
- 4 tablespoons butter
- 1/2 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Potatoes:
- Boil the potatoes in a pot with salted water until tender, about PT20M (20 minutes).
- Drain and return them to the pot.
- Add butter and milk, then mash until smooth. Stir in shredded cheese and season with salt and pepper to taste. Set aside.
2. Cook the Beef Mixture:
- Preheat your oven to 375°F (190°C).
- In a large ovenproof skillet over medium heat, brown the ground beef, breaking it apart with a wooden spoon.
- Once browned, drain excess fat and add onions, carrots, celery, and garlic. Cook until the vegetables are softened, about PT10M (10 minutes).
- Sprinkle flour over the mixture, stirring for PT2M (2 minutes) until combined.
- Slowly add the beef broth, Worcestershire sauce, and tomato paste, stirring constantly.
- Add thyme, bay leaf, and peas. Season with salt and pepper.
- Simmer the mixture until it thickens slightly, about PT15M (15 minutes).
3. Assemble and Bake:
- Evenly spread the mashed potatoes over the beef mixture in the skillet.
- Using a fork, create small ridges in the potatoes to encourage browning.
- Place the skillet in the preheated oven and bake until the top is golden brown, approximately PT30M (30 minutes).
4. Serve:
- Garnish with freshly chopped parsley before serving.
