Ultimate Crock Pot Beef and Bean Fiesta Bowl
Ingredients
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 large onion, diced
- 1 can (15.25 oz) corn, drained
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (10 oz) Rotel diced tomatoes and green chilies
- 1 can (14.5 oz) diced tomatoes
- 1 packet (1 oz) dry ranch seasoning mix
- 1 packet (1 oz) taco seasoning
- 4 cups beef broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 avocados, sliced
- 1 cup sour cream
- 2 cups Fritos
Instructions
1. Brown the Ground Beef:
- Heat the olive oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, about 7-10 minutes.
- Drain excess fat and transfer the beef to the crock pot.
2. Prepare the Vegetables and Beans:
- In the same skillet, add the diced onion and sauté until translucent, about 5 minutes.
- Add the sautéed onions to the crock pot.
- Add the corn, pinto beans, Rotel diced tomatoes and green chilies, and diced tomatoes to the crock pot.
3. Season the Mixture:
- Sprinkle the dry ranch seasoning mix and taco seasoning over the ingredients in the crock pot.
4. Add the Beef Broth:
- Pour the beef broth into the crock pot, ensuring the ingredients are fully submerged in liquid.
5. Slow Cook the Mixture:
- Cover the crock pot with its lid and set it to low heat.
- Cook for 6-8 hours on low, or until the flavors have melded together beautifully.
6. Serve and Garnish:
- Once cooked, ladle the mixture into serving bowls.
- Top each bowl with shredded cheese, sliced avocado, a dollop of sour cream, and a generous handful of Fritos.
