Ultimate Crock-Pot Zuppa Toscana: A Hearty Dinner Delight
Ingredients
- 5 medium Russet potatoes, peeled and diced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 quart chicken broth
- 1 pound hot Italian sausage, casings removed
- 1 bunch kale, stems removed and chopped
- 1 cup heavy cream
- 6 slices bacon, cooked and crumbled
Instructions
1. Prepare the Sausage and Bacon:
- In a skillet over medium heat, cook the hot Italian sausage, breaking it into small pieces with a spatula until fully browned. Remove the cooked sausage with a slotted spoon, and drain any excess fat.
- In the same skillet, fry the bacon slices until crispy. Remove and place them on a paper towel-lined plate to cool. Once cooled, crumble the bacon.
2. Set Up the Crock-Pot:
- Add the diced Russet potatoes, chopped onion, and minced garlic to the Crock-Pot. Pour the chicken broth over the ingredients.
3. Cook the Base:
- Cover the Crock-Pot and set it to LOW. Let it cook for PT4H 4 hours, or until the potatoes are tender and the flavors have blended.
4. Add Kale and Cream:
- Once the base is ready, stir in the cooked sausage and kale. Allow the kale to soften, cooking for an additional PT15M 15 minutes on LOW.
5. Finish with Cream:
- Before serving, add the heavy cream, and gently stir the soup to combine.
- Test for seasoning and adjust with salt and pepper as necessary.
6. Serve Your Masterpiece:
- Ladle the Zuppa Toscana into bowls, garnish with crumbled bacon, and enjoy a hearty, comforting dinner.
