Ingredients
- 8 oz shredded cheese (cheddar or a Mexican blend)
- 1 large onion, finely chopped
- 1 bell pepper, diced
- 2 large tomatoes, diced
- 1 bag nacho chips
- 1 cup breaded coating (such as seasoned breadcrumbs)
- 1 cup salsa
- 1 cup pico de gallo
- 1 cup guacamole
- 2 jalapeño peppers, thinly sliced
- Fresh cilantro, chopped (for garnish)
- 1 lb ground beef
- 1 lb shredded chicken
- 1 cup broccoli, finely chopped
- 1 cup corn kernels
- Shredded lettuce (for serving)
- Oil for deep frying
Instructions
1. Prepare the Filling:
- In a large skillet over medium heat, cook the ground beef until browned, about 8 minutes. Drain any excess fat and set aside.
- In the same skillet, sauté onions, bell peppers, and half the jalapeño slices until soft, about 5 minutes. Add broccoli, corn, and shredded chicken, cooking for an additional 5 minutes.
- Mix in the cooked ground beef and diced tomatoes. Stir until well combined. Remove from heat and allow to cool slightly.
2. Assemble the Nacho Balls:
- In a large bowl, crumble the nacho chips to create a coarse texture.
- Add the meat and vegetable mixture from the skillet and the shredded cheese to the bowl. Mix thoroughly.
- Using your hands, form the mixture into small balls, about 1.5 inches in diameter.
3. Coat and Fry:
- Heat oil in a deep fryer or large saucepan to 350°F.
- Roll each ball in the breaded coating, ensuring they are fully covered.
- Deep fry in batches for 3-5 minutes until golden brown. Use a slotted spoon to remove and drain on paper towels.
4. Serve:
- Arrange the deep-fried nacho balls on a serving platter lined with shredded lettuce.
- Garnish with fresh cilantro and remaining jalapeño slices.
- Serve with bowls of salsa, pico de gallo, and guacamole on the side for dipping.
