Ultimate Five-Cheese Bacon Beef Burgers with Dill Pickle Aioli



Ingredients



- For the Burgers:
- 1.5 pounds ground beef
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 slices bacon
- 4 slices American cheese
- 4 slices Cheddar cheese
- 4 slices Swiss cheese
- 4 slices Pepper Jack cheese
- 4 slices Colby cheese
- 4 burger buns

- For Dill Pickle Aioli:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 2 tablespoons finely chopped dill pickles
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

- For Serving:
- 1/2 cup BBQ sauce

Instructions



1. Prepare the Dill Pickle Aioli:
- Combine 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon mustard, 2 tablespoons dill pickles, 1 teaspoon sugar, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a bowl. Mix well and refrigerate until needed.

2. Prepare the Bacon:
- In a skillet, pan-fry the bacon over medium heat until crispy, approximately PT10M (10 minutes).
- Remove bacon from the skillet and place on paper towels to drain excess grease. Set aside.

3. Make the Burger Patties:
- In a large bowl, combine 1.5 pounds of ground beef, onion powder, garlic powder, salt, and black pepper. Mix gently until just combined.
- Divide the mixture into four equal portions and shape each into a patty.

4. Cook the Burgers:
- In the same skillet used for bacon, pan-fry the burger patties over medium-high heat for approximately PT12M (12 minutes), flipping once halfway through until they reach an internal temperature of 160°F.
- In the last 2 minutes of cooking, layer each patty with one slice of each cheese: American, Cheddar, Swiss, Pepper Jack, and Colby. Cover the skillet to allow cheese to melt.

5. Assemble the Burgers:
- Toast the burger buns lightly in the skillet or under a broiler for about PT2M (2 minutes).
- Spread a generous amount of dill pickle aioli on the bottom half of each bun.
- Place the cheesy burger patties on top, followed by the crispy bacon.
- Spread some BBQ sauce on the top halves of the buns, then place them on top to complete the burger.
