Ultimate Golden Crispy Mixed Oil Fries
Ingredients
* 1 quart extra-virgin olive oil
* 1 quart refined olive oil
* 1 quart avocado oil
* 1 quart sunflower oil
* 1 quart corn oil
* 1 quart canola oil
* 4 large russet potatoes
* 2 teaspoons kosher salt
* 1 teaspoon ground black pepper
* Optional serving suggestion: Ketchup or aioli for dipping
Instructions
1. Prepare the Potatoes
- Peel the russet potatoes and slice them into even sticks approximately 1/4-inch thick. This will ensure they cook evenly.
- Rinse the potato sticks under cold water to remove excess starch, which helps achieve a crispy texture. Pat dry thoroughly with paper towels.
2. Preheat the Oil
- In a large deep-fryer or heavy-bottomed pot, combine the extra-virgin olive oil, refined olive oil, avocado oil, sunflower oil, corn oil, and canola oil.
- Heat the oil mixture over medium heat until it reaches a temperature of 350°F (175°C). Use a candy or deep-fry thermometer for accuracy.
3. First Fry (Blanching)
- Carefully add the dried potato sticks to the hot oil in batches, ensuring not to crowd the pot. Fry for 5 to 6 minutes, until the potatoes are tender and a light golden color.
- Remove the potatoes with a slotted spoon and transfer them to a paper towel-lined tray to drain. Let cool for at least 15 minutes.
4. Second Fry (Crisping)
- Increase the oil temperature to 375°F (190°C).
- Once the oil is heated, add the blanched potatoes back to the oil, again in batches. Fry for an additional 3 to 4 minutes until golden brown and crispy.
- Remove from oil and place on fresh paper towels to absorb any excess oil.
5. Season and Serve
- While the fries are still hot, season generously with kosher salt and ground black pepper to taste.
- Serve immediately with your favorite dipping sauce like ketchup or aioli for an added flavor boost.
