Ultimate Layered Nacho Casserole Delight
Ingredients
- Tortilla Chips: 1 large bag (around 13 oz)
- Ground Beef: 1 lb
- Taco Seasoning: 1 packet (1 oz)
- Refried Beans: 1 can (16 oz)
- Cheddar Cheese, shredded: 2 cups
- Carne Asada, shredded beef: 1/2 lb
- Shredded Pork: 1/2 lb
- Ground Chicken: 1/2 lb
- Ground Turkey: 1/2 lb
- Tomatoes, diced: 2 large
- Onions, diced: 1 large
- Bell Peppers, diced: 1 large (any color)
- Jalapeños, sliced: 2
- Corn: 1 cup
- Avocado, diced: 2
- Guacamole: 1 cup
- Salsa: 1 cup
- Sour Cream: 1 cup
- Hot Sauce: 3 tablespoons
- Cheese Sauce: 1 cup
Instructions
1. Prepare the Vegetable Toppings
- Preheat the oven to 350°F.
- Dice the tomatoes, onion, and bell peppers. Slice the jalapeños and set aside.
2. Cook the Meats
- In a large skillet over medium heat, cook the ground beef with half the taco seasoning until browned. This will take about 8-10 minutes. Remove and set aside.
- In the same skillet, cook the ground chicken with the remaining taco seasoning until browned, about 7-8 minutes. Remove and set aside.
- Repeat the process with the ground turkey, cooking for about 6-7 minutes.
- Finally, shred the pre-cooked carne asada and shredded pork, mixing them together in a bowl.
3. Assemble the Casserole
- In a large oven-proof dish, spread a layer of tortilla chips on the bottom.
- Evenly distribute spoonfuls of refried beans over the chips.
- Add the cooked ground beef, ground chicken, and ground turkey.
- Layer with half of the diced tomatoes, onions, and bell peppers.
- Sprinkle half of the shredded cheddar cheese over the top.
- Add another layer of tortilla chips.
- Spread the carne asada and shredded pork mixture over the chips.
- Top with the remaining vegetables.
- Pour the cheese sauce evenly over the top.
- Sprinkle the remaining shredded cheddar cheese.
4. Bake
- Place the casserole in the preheated oven and bake for 20 minutes or until cheese is bubbly and golden.
5. Serving and Garnishing
- Remove from the oven and allow to cool for a few minutes.
- Top with diced avocado, jalapeños, and corn.
- Serve with guacamole, salsa, sour cream, and hot sauce on the side.
