Ultimate Mediterranean Chickpea Pita Pockets
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cucumber, diced
- 1/2 cup crumbled feta cheese
- 2 cups arugula
- 1 cup tzatziki sauce
- 4 whole wheat pita pockets
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh dill
- 1 clove garlic, minced
- 2 tablespoons hummus
- 2 tablespoons olive oil
- 1 tablespoon dijon mustard
- 1 tablespoon red wine vinegar
- Salt and pepper, to taste
- 1/4 cup kalamata olives, sliced
- 1/4 cup pepperoncini slices
- 2 tablespoons capers
- 1/2 cup artichoke hearts, chopped
- 3 sun-dried tomatoes, finely chopped
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare Chickpeas: In a microwave-safe bowl, mix the chickpeas, lemon juice, minced garlic, and a pinch of salt and pepper. Cover and microwave on high for PT1M (1 minute) to infuse the flavors.
2. Make the Dressing: In a small bowl, combine olive oil, dijon mustard, red wine vinegar, and a dash of salt and pepper. Whisk until emulsified.
3. Assemble Salad: In a large bowl, combine cherry tomatoes, red onion, cucumber, kalamata olives, pepperoncini slices, capers, artichoke hearts, sun-dried tomatoes, and fresh parsley. Drizzle with the prepared dressing and toss gently to coat.
4. Warm Pitas: In the microwave, warm the pita pockets on high for PT30S (30 seconds) or until they are soft and pliable.
5. Layer Ingredients: Carefully cut each pita in half to create pockets. Gently spread a spoonful of hummus inside each pita pocket. Stuff with a handful of arugula, then layer with the dressed salad and marinated chickpeas.
6. Add Tzatziki and Feta: Spoon tzatziki sauce over each stuffed pita and sprinkle with crumbled feta cheese. Garnish with fresh dill.
