Ultimate Moist Chocolate Cake
Ingredients
For the Cake:
- 1 cup unsalted butter (softened)
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 3/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup brewed coffee (cooled)
- 1 cup buttermilk
- 2 1/2 cups all-purpose flour
For the Frosting:
- 1 cup unsalted butter (softened)
- 3 1/2 cups powdered sugar
- 1/2 cup cocoa powder
- 1/4 cup buttermilk
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
Instructions
1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans and set them aside.
2. Mix Dry Ingredients:
- In a bowl, sift together 3/4 cup cocoa powder, 2 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt. Set aside.
3. Cream Butter and Sugars:
- In a large mixing bowl, beat 1 cup of softened butter and 1 cup granulated sugar with an electric mixer until light and fluffy, about 3 minutes.
4. Add Wet Ingredients:
- Add eggs one at a time, beating well after each addition.
- Stir in 2 teaspoons of vanilla extract.
- Slowly add in 1/2 cup of vegetable oil.
5. Combine Coffee and Buttermilk:
- In another bowl, mix 1 cup of cooled brewed coffee with 1 cup of buttermilk.
6. Combine Everything:
- Alternately add the dry ingredients and the coffee/buttermilk mixture to the creamed mixture, starting and ending with dry ingredients. Mix until just combined.
7. Bake the Cake:
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
8. Prepare the Frosting:
- In a large bowl, beat 1 cup of softened butter until creamy.
- Gradually add 3 1/2 cups powdered sugar and 1/2 cup cocoa powder, beating well.
- Mix in 1/4 cup buttermilk, 2 teaspoons vanilla extract, and 1/4 teaspoon salt.
- Beat until the frosting is smooth and spreadable.
9. Assemble the Cake:
- Place one cake layer on a serving platter and spread a layer of frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake.
