Ultimate Stove-Top Bacon and Char Siu Fried Rice
Ingredients
- 2 cups Thai jasmine rice, cooked and cooled
- 3 large eggs
- 6 slices bacon, chopped
- 2 tablespoons toasted sesame oil
- 1/2 cup char siu, diced
- 2 links Chinese sausage, sliced
- 1 cup carrots, diced
- 1 cup green peas, frozen or fresh
- 1 cup corn, frozen or fresh
- 4 scallions, chopped
- 1/2 teaspoon white pepper
- Salt, to taste
Instructions
1. Prepare the Ingredients:
- Cook and cool 2 cups of Thai jasmine rice ahead of time. It should be cold to prevent clumping during frying.
- Chop bacon, dice char siu, slice Chinese sausage, and dice the carrots. Set aside.
- Slice scallions and measure out peas and corn. Set aside.
2. Cook the Bacon and Sausage:
- In a large skillet or wok, heat 1 tablespoon of toasted sesame oil over medium heat.
- Add the chopped bacon and sliced Chinese sausage. Sauté until the bacon is crispy and the sausage is slightly caramelized, about 5-7 minutes.
- Remove bacon and sausage with a slotted spoon, leaving the rendered fat in the pan.
3. Scramble the Eggs:
- Crack the eggs into a bowl and beat lightly.
- Pour the beaten eggs into the hot pan with bacon fat and scramble lightly until just set. Remove and set aside with bacon and sausage.
4. Sauté the Vegetables:
- Add the remaining tablespoon of toasted sesame oil to the skillet.
- Stir in diced carrots, green peas, and corn. Cook for about 3-5 minutes until just tender.
5. Fry the Rice:
- Add the cooled jasmine rice to the vegetable mixture.
- Stir-fry the rice, breaking up any clumps, and ensure everything is well-combined.
- Return the cooked eggs, bacon, char siu, and sausage to the pan.
6. Flavor and Finish:
- Sprinkle white pepper over the fried rice and season with salt to taste.
- Toss in the chopped scallions, mixing evenly.
- Continue to cook for an additional 3-4 minutes until everything is hot and the flavors meld.
7. Serve:
- Serve immediately, garnished with extra scallions if desired.
