Ultimate Stove-Top Tomato Basil Chickpea Pasta
Ingredients
- 12 oz short pasta (e.g., penne or fusilli)
- 2 tablespoons extra virgin olive oil
- 1 large shallot, finely chopped
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- ½ cup sun-dried tomatoes, chopped
- 1 (15 oz) can chickpeas, drained and rinsed
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon crushed red pepper flakes
- Kosher salt, to taste
- Black pepper, to taste
- Handful of fresh basil leaves, roughly torn
Instructions
1. Prepare Pasta
Bring a large pot of salted water to a boil over high heat. Add the short pasta and cook according to the package instructions until al dente. Drain and set aside.
2. Sauté Aromatics
In a large skillet, heat the extra virgin olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until the shallot becomes translucent and fragrant, about 3-4 minutes.
3. Incorporate Tomatoes and Chickpeas
Stir in the crushed tomatoes, sun-dried tomatoes, and chickpeas. Season with kosher salt, black pepper, and crushed red pepper flakes to taste. Bring the mixture to a gentle simmer and cook for 8-10 minutes, allowing the flavors to meld.
4. Add Cream and Cheese
Reduce the heat to low and gently stir in the heavy cream and Parmesan cheese. Continue cooking, occasionally stirring, until the sauce is creamy and slightly thickened, about 5 minutes.
5. Combine with Pasta
Add the cooked pasta to the skillet, tossing it well to ensure the pasta is thoroughly coated with the sauce. Cook for another 2-3 minutes to heat through and allow the flavors to merge.
6. Finish with Basil
Turn off the heat and stir in the fresh basil leaves. Allow the pasta to rest for 1-2 minutes before serving, letting the basil’s aroma infuse the dish.
