Ultimate Umami Infused Pasta with Parmesan Miso Sauce



Ingredients



- 8 oz spaghetti or pasta of choice
- 2 tablespoons Worcestershire sauce
- 1 small Parmesan rind (about 1 oz)
- 2 tablespoons white miso paste
- 1 tablespoon soy sauce
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon black pepper
- 1/4 cup reserved pasta water
- 2 tablespoons chopped fresh parsley for garnish

Instructions



1. Prepare the Pasta:
- Bring a large pot of salted water to a boil over medium-high heat.
- Add 8 oz of spaghetti and cook according to package instructions until al dente. This will take approximately 8-10 minutes.
- Reserve 1/4 cup of the pasta cooking water and then drain the pasta. Set aside.

2. Infuse the Sauce:
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant and slightly golden.

3. Create the Umami Base:
- Stir in 2 tablespoons of Worcestershire sauce, the small Parmesan rind, 2 tablespoons of miso paste, and 1 tablespoon of soy sauce.
- Stir the mixture continuously until the miso paste is fully dissolved and the ingredients are well combined, approximately 3 minutes.

4. Incorporate the Pasta:
- Reduce the heat to low and add the drained pasta to the skillet.
- Pour the reserved 1/4 cup of pasta water into the skillet, stirring constantly to create a creamy sauce that fully coats the pasta.

5. Season and Finish:
- Add 1/2 teaspoon of black pepper and adjust seasoning if necessary.
- Continue stirring until the sauce thickens slightly, about 2-3 minutes.
- Remove the Parmesan rind before serving.

6. Serve:
- Plate the pasta and garnish with chopped fresh parsley.
- Serve hot for optimal flavor and freshness.
