Ingredients
- 2 large plantains, ripe
- 2 medium ripe bananas
- 1/2 cup unsweetened applesauce
- 1 tablespoon flax seeds, ground

Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Prepare a baking dish (approximately 8x8 inches) by greasing it with cooking spray or coconut oil to prevent sticking.
2. Prepare the Plantains
Peel the plantains and slice them diagonally into 1/4-inch thick slices. Arrange a single layer of plantain slices evenly in the prepared baking dish.
3. Make the Banana Mixture
In a large mixing bowl, mash the bananas with a fork until smooth. Add the ground flax seeds, vanilla extract, brown sugar, salt, cinnamon, and melted coconut oil. Mix well until all ingredients are fully incorporated.
4. Combine with Plantains
Pour the banana mixture over the layer of plantains, spreading it evenly with a spatula to ensure that each slice is coated.
5. Swirl in Applesauce
Drizzle the applesauce over the banana-plantain mixture. Use a knife or a toothpick to gently swirl the applesauce throughout, creating a marbled effect.
6. Bake
Place the dish in the preheated oven and bake for PT40M (40 minutes) until the top is golden brown and the plantains are tender.
7. Cool and Serve
