Vanilla Bean-Infused Baked Custard Delight



Ingredients


- 3 whole vanilla beans
- 1 cup granulated sugar
- 8 large egg yolks
- 2 cups heavy cream
- 1 cup whole milk
- 1/4 teaspoon salt

Instructions


1. Preheat and Prepare: Preheat your oven to 325°F (163°C). Arrange six ramekins in a large baking dish.

2. Vanilla Bean Prep: Split the vanilla beans lengthwise using a sharp paring knife. Scrape the seeds out with the back of the knife.

3. Heat Cream and Milk: In a medium saucepan, combine the heavy cream, whole milk, vanilla seeds, and the scraped pods. Heat over medium-low heat until it just begins to simmer (do not let it boil). Once warmed, remove from heat and let it sit for 15 minutes to steep.

4. Mix Egg Yolks and Sugar: In a large mixing bowl, whisk together the egg yolks, sugar, and salt until the mixture is thick and pale yellow.

5. Combine Mixtures: Gradually pour the infused cream mixture into the egg-sugar mixture, whisking continuously to ensure the eggs do not curdle.

6. Strain for Smoothness: Strain the custard through a fine-mesh sieve into a clean bowl to remove the vanilla pods and any curdled egg bits, ensuring a smooth dessert.

7. Fill Ramekins: Evenly divide the custard mixture among the six ramekins.

8. Baking Setup: Carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins, creating a water bath for gentle and even cooking.

9. Bake: Place the baking dish in the preheated oven and bake for about 40 minutes, or until the custard is set but still jiggly in the center when shaken gently.

10. Cool and Serve: Remove ramekins from the water bath and allow them to cool to room temperature. Cover each with plastic wrap and refrigerate for at least 2 hours before serving.
