Vanilla Biscoff Ice Cream Parfait
Ingredients
- 2 cups vanilla ice cream, slightly softened
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 tbsp vanilla bean paste
- 1 tsp vanilla extract
- 10 Lotus Biscoff Cookies, crushed
Instructions
1. Prep the Creme Chantilly:
In a chilled mixing bowl, combine 1 cup of heavy cream, 1/2 cup of granulated sugar, and 1 tsp of vanilla extract. Use an electric mixer on medium speed to whip the mixture until soft peaks form. This should take approximately 3-5 minutes. Set aside in the refrigerator to chill.
2. Prepare the Ice Cream Base:
In another bowl, mix 2 cups of softened vanilla ice cream and 1 tbsp of vanilla bean paste until thoroughly combined. The paste will add a rich, vanilla flavor and beautiful specks to your ice cream.
3. Crush the Cookies:
Place 10 Lotus Biscoff Cookies in a resealable plastic bag. Use a rolling pin to crush the cookies into small pieces. You want a mix of fine crumbs for texture and larger pieces for bites of crunch. Reserve a few whole crumbs for garnish.
4. Layer the Parfaits:
In your serving glasses or bowls, start by adding a spoonful of the crushed cookies at the bottom. Add a scoop of the vanilla ice cream mixture, followed by a layer of Creme Chantilly. Repeat layering with remaining ingredients, filling the glasses to your preference.
5. Finish with Flair:
Top each parfait with a dollop of the remaining whipped chantilly cream and a sprinkle of reserved cookie crumbs. For extra presentation, add a whole Biscoff cookie on top if desired.
6. Serve Immediately:
These parfaits should be served immediately to enjoy the contrasting textures and creamy consistency.
