Vanilla Celebration Cupcakes with Buttercream Frosting and Sprinkles



Ingredients



For the Cupcakes:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 2 large eggs
- ½ cup whole milk
- ¼ cup sour cream
- ½ cup unsalted butter, melted and slightly cooled
- 2 tablespoons vegetable oil
- 2 teaspoons vanilla extract

For the Vanilla Buttercream Frosting:
- ¾ cup unsalted butter, softened
- 2 ½ cups powdered sugar
- 2 teaspoons vanilla extract
- 2 tablespoons whole milk

Garnish:
- Assorted sprinkles

Instructions



1. Preheat the Oven:
- Preheat your oven to 350°F. Line a 12-cup muffin tin with cupcake liners.

2. Prepare the Dry Ingredients:
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, cornstarch, baking powder, baking soda, and kosher salt until well combined.

3. Mix the Wet Ingredients:
- In a large mixing bowl, whisk together the eggs and whole milk. Add in the sour cream, melted butter, vegetable oil, and vanilla extract, and whisk until smooth.

4. Combine Ingredients:
- Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula until combined. Be careful not to overmix.

5. Fill the Muffin Tin:
- Evenly distribute the batter among the prepared cupcake liners, filling each about ⅔ full.

6. Bake the Cupcakes:
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

7. Cool the Cupcakes:
- Remove the cupcakes from the oven and allow them to cool in the pan for about 5 minutes. Transfer them to a wire rack to cool completely.

8. Prepare the Buttercream Frosting:
- In a large bowl, beat the softened butter on medium speed until creamy. Gradually add the powdered sugar, one cup at a time, mixing on low speed. Add the vanilla extract and whole milk, and increase the speed to medium-high, beating until the frosting is light and fluffy.

9. Frost the Cupcakes:
- Once the cupcakes are thoroughly cooled, use a piping bag with a star tip to frost the cupcakes generously with the vanilla buttercream frosting.

10. Decorate:
- Sprinkle the top of each cupcake generously with assorted sprinkles.
