Ingredients
- 2 vanilla beans
- 1 teaspoon vanilla bean extractive
- 1/2 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 cup peanut butter
- 2 sliced bananas
- 1 cup plain yogurt
- 1 cup mixed berries (e.g., blueberries, raspberries, strawberries)
- 1/2 cup walnuts, roughly chopped
- 1 cup granola
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
2. Prepare the Vanilla Mixture:
Split the vanilla beans lengthwise and scrape the seeds into a small bowl. Add the vanilla bean extractive, sugar, and ground cinnamon. Mix well to combine.
3. Layer the Banana and Berries:
In a baking dish, arrange half of the sliced bananas as the base layer. Sprinkle half of the vanilla mixture over the bananas. Follow with an even layer of mixed berries.
4. Spread the Peanut Butter:
Gently melt the peanut butter until it is soft enough to drizzle. Pour half of it over the berries.
5. Repeat the Layers:
Add the remaining sliced bananas as the next layer, followed by the leftover vanilla mixture. Pour the rest of the peanut butter over this layer.
6. Top with Yogurt and Walnuts:
Spoon the plain yogurt over the peanut butter layer, smoothing it out evenly. Scatter the chopped walnuts on top.
7. Add the Granola:
Evenly sprinkle the granola on the topmost layer.
8. Bake:
Place the baking dish in the preheated oven. Bake for approximately 25 minutes, or until the top is golden and the mixture is bubbling gently around the edges.
9. Let it Cool:
Once baked, remove from the oven and let it cool for about 10 minutes before serving, allowing the flavors to meld together beautifully.
