Ingredients
- 1 1/2 cups cookies, crushed
- 2 cups cream

Instructions
1. Preheat the oven to 350°F (175°C).
2. Prepare the tricolor pasta: Boil the pasta until al dente according to package instructions. Drain, rinse with cold water, and set aside to cool.
3. Mix the dry ingredients: In a large mixing bowl, combine 1 1/2 cups whole wheat flour, 1/4 teaspoon salt, and 1/2 teaspoon baking powder. Stir with a whisk to ensure even distribution.
4. Prepare the wet mixture: In a separate bowl, blend 1/2 cup soy milk, 2 teaspoons vanilla extract, 1/2 cup brown sugar, and 2 cups cream. Stir well until the sugar dissolves.
5. Combine the mixtures: Gradually add the wet mixture to the dry ingredients, stirring continuously until the batter is smooth and lump-free.
6. Incorporate potatoes and pasta: Fold in the grated red potatoes and cooled tricolor pasta into the batter, ensuring even distribution throughout the mixture.
7. Grease a baking dish: Use a pastry brush to lightly coat an 8x8 inch baking dish with melted butter.
8. Assemble the dessert: Pour the batter into the prepared baking dish. Top evenly with the crushed cookies and drizzle 1/4 cup melted butter over the top.
