Velvety Butternut Squash and Apple Curry Soup
Ingredients
- 3 cups butternut squash, peeled and diced
- 2 medium onions, chopped
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 tablespoon curry powder
- 2 apples, peeled, cored, and chopped
- 2 cups chicken stock
- 1 cup water
- 1 cup apple juice
- 1/2 cup apple cider
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh sage, chopped
- 1/2 cup cream
- 1/4 cup sour cream
- 1/4 cup pumpkin seeds, toasted
- Salt and pepper to taste
Instructions
1. Saute Onions
- In a large pot, combine the butter and olive oil over medium heat.
- Add the chopped onions and sauté until they are soft and translucent, around 7-8 minutes.
2. Add Curry and Aromatics
- Stir in the curry powder, coating the onions well. Cook for an additional 1-2 minutes until fragrant.
3. Cook Squash and Apples
- Add the diced butternut squash and chopped apples to the pot, stirring to mix everything well.
- Season with a pinch of salt and pepper.
4. Simmer Soup Base
- Pour in the chicken stock, water, apple juice, and apple cider. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let cook for 20-25 minutes or until the squash is tender.
5. Blend Smooth
- Remove the pot from heat. Using an immersion blender, puree the soup until smooth and creamy. Alternatively, transfer in batches to a blender and blend until smooth.
6. Finish the Soup
- Return the pot to low heat, stir in the cream, fresh thyme, and sage. Cook for an additional 5 minutes, stirring occasionally.
7. Adjust Seasoning
- Taste the soup and adjust the seasoning with additional salt and pepper if necessary.
8. Serve the Soup
- Ladle the soup into bowls. Swirl in a dollop of sour cream and sprinkle with toasted pumpkin seeds.
