Vibrant Citrus & Watermelon Breakfast Delight
Ingredients
- 2 Oranges
- 1 Lemon
- 1 Lime
- 2 cups Watermelon cubes
- 1/2 cup Pomegranate arils
- 1 Tomato
- 1 tablespoon Honey (optional)
- 1/4 teaspoon Sea Salt
Instructions
1. Prepare the Fruits
- Peel the oranges, lemon, and lime. Segment the fruits, removing any seeds, and set the segments aside.
- Dice the tomato into small cubes and place aside.
- Ensure the watermelon is cut into roughly 1-inch cubes. If not already done, cut and set aside.
2. Mix the Salad
- In a large microwave-safe bowl, combine the orange, lemon, and lime segments with the watermelon cubes, diced tomato, and pomegranate arils.
- Drizzle honey over the top, if using, and sprinkle sea salt evenly across the mixture.
3. Microwave the Mixture
- Cover the bowl with a microwave-safe lid or plastic wrap with a few holes poked in it for steam to escape.
- Microwave on high for approximately PT3M (3 minutes) until the fruits are warm but still retain their texture.
4. Finishing Touches
- Carefully remove the cover (beware of steam), and gently stir the mixture to combine flavors. Allow it to cool slightly before serving.
5. Serve
- Divide the fruit delight among four breakfast plates or bowls.
- Optionally, garnish with a few additional pomegranate arils or a light sprinkle of sea salt.
