Vibrant Mediterranean Pasta Salad with Fresh Veggies and Feta
Ingredients
- 8 oz Pasta (any variety, preferably fusilli or rotini)
- 2 Tbsp Vegetable oil
- 1 Red bell pepper, diced
- 1 Yellow bell pepper, diced
- 1 Medium zucchini, diced
- 2 Medium tomatoes, diced
- 1 Large carrot, julienned
- 1 Cup corn kernels (fresh or frozen)
- 4 Radishes, thinly sliced
- 4 oz Feta cheese, crumbled
- 2 Tbsp Vinegar (preferably red wine vinegar)
- 1 Tbsp Dijon mustard
- 1 Tsp Sugar
- 1 Tsp Dried oregano
- 1/2 Tsp Garlic powder
- Salt and pepper to taste
- 1 Medium onion, thinly sliced
- 2 Tbsp Fresh dill, chopped
- 2 Tbsp Fresh parsley, chopped
Instructions
1. Cook the Pasta
a. In a large pot, bring water to a boil and add a pinch of salt.
b. Add the pasta and cook until al dente, according to package instructions (PT8M to PT10M).
c. Drain the pasta and rinse under cold water to stop cooking. Set aside.
2. Prepare the Dressing
a. In a small bowl, whisk together the vinegar, Dijon mustard, sugar, oregano, garlic powder, vegetable oil, salt, and pepper.
b. Adjust seasoning if necessary, then set aside.
3. Sauté the Vegetables
a. In a large skillet, warm a tablespoon of vegetable oil over medium heat.
b. Add onions and sauté until translucent (PT5M).
c. Add bell peppers, zucchini, and carrot to the skillet. Cook until just tender (PT5M).
d. Remove from heat and let cool slightly.
4. Assemble the Salad
a. In a large mixing bowl, combine the cooked pasta, skillet vegetables, tomatoes, corn, radishes, feta cheese, fresh dill, and parsley.
b. Pour the dressing over the salad mixture and gently toss to coat all ingredients evenly.
5. Chill and Serve
a. Cover the salad and refrigerate for at least PT30M for the flavors to meld.
b. Before serving, taste and adjust seasoning if necessary. Serve chilled.
