Ingredients


- 1 medium red onion, finely diced
- 1 lime, juiced
- 1 teaspoon kosher salt
- 1 cup fresh pineapple, diced
- 2 small cucumbers, peeled and diced

- 1 red chile, finely sliced (seeds removed for less heat)
- 1/2 cup crumbled feta cheese

Instructions


1. Prepare the Red Onion:
Place the finely diced red onion in a small bowl. Squeeze the juice of one lime over it, ensuring the juice is evenly distributed. Sprinkle the kosher salt over the mixture. Let it sit for about 10 minutes to allow the flavors to meld, which will also mellow the sharpness of the onion.

2. Combine the Ingredients:
In a large mixing bowl, add the diced pineapple and cucumbers. Toss them gently together to combine.

3. Add Flavor:
