Vibrant Rotisserie Chicken and Cabbage Skillet



Ingredients



- 3 cups shredded cabbage
- 1 cup frozen peas, thawed
- 1/2 cup roasted peanuts
- 2 tablespoons curry powder
- 1 teaspoon salt
- 2 tablespoons vinegar
- 2 tablespoons lemon juice
- 1/4 cup raisins
- 1/4 cup chopped dried apricots
- 2 cups rotisserie chicken, shredded

Instructions



1. Prepare Ingredients:
- Shred 3 cups of cabbage and set aside.
- Thaw 1 cup of frozen peas in a bowl of warm water and then drain.
- Chop 1/4 cup of dried apricots into small pieces.

2. Preheat Pan:
- Place a large skillet over medium heat on the stove. Allow it to heat for about 2 minutes.

3. Cook Cabbage:
- Add the shredded cabbage to the hot skillet. Cook for about 5 minutes, stirring occasionally, until it begins to soften.

4. Add Peas and Peanuts:
- Stir in 1 cup of thawed peas and 1/2 cup of roasted peanuts. Cook for an additional 3 minutes, blending the ingredients.

5. Season the Mixture:

6. Add Chicken and Fruits:
- Incorporate 2 cups of shredded rotisserie chicken, 1/4 cup of raisins, and 1/4 cup of chopped dried apricots. Mix thoroughly.

7. Finish with Vinegar and Lemon:
- Pour in 2 tablespoons of vinegar and 2 tablespoons of lemon juice. Stir the mixture continuously for about 2 minutes, allowing the flavors to meld.
