Zesty Ancho Chili-Crusted Chicken Tenders with Lime Yogurt Dip
Ingredients
- 1 lb chicken tenders
- 1 cup panko breadcrumbs
- 1/4 cup melted butter
- 2 teaspoons ancho chili powder
- 1 cup Greek yogurt
- 2 limes (juice of 1 lime, zest, and juice of another)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prepare the Crust
In a medium bowl, mix the panko breadcrumbs, melted butter, and ancho chili powder until the breadcrumbs are evenly coated.
3. Season the Chicken
Season the chicken tenders with salt and pepper on both sides.
4. Coat the Chicken
Dip each chicken tender into the panko mixture, pressing firmly to ensure the breadcrumbs adhere well to the chicken.
5. Bake the Chicken
Place the coated chicken tenders on a baking sheet lined with parchment paper. Bake for approximately 20 minutes, or until the chicken is cooked through and the crust is golden and crispy.
6. Prepare the Lime Yogurt Dip
While the chicken is baking, in a small bowl, combine the Greek yogurt, juice of 1 lime, the zest, and juice of the second lime. Mix well until smooth.
7. Serve
Once the chicken tenders are done, remove them from the oven and allow them to rest for a few minutes. Serve with the lime yogurt dip on the side.
